Q: I've noticed that some fundraisers are spread over two months - e.g. They received donations in November and December. If I filter my date range to only November, will their donations received in December still be shown on their fundraiser record and fundraiser total?

A: Yes. When in the fundraiser list, it's all about the start date of the fundraiser (or Donate Button posts), for example, when filtering by date in the fundraiser list, it will show you all of the fundraisers (or Donate Button posts) that STARTED during these dates and ALL donations that these fundraisers have received. It doesn't matter when the donations were received.
